Spicy chicken with cauliflower rice

This is a delicious and healthy low-carbohydrate recipe! This spicy recipe is fantastic, nutritious and healthy. It is also easy to make and quickly ready. With this recipe you can make a healthy meal within 20 minutes. The hot sauce is the most significant partof this meal. The sauce made from onion, garlic, soy sauce, sambal, peanut butter and ketchup has a delicious spicy taste. The spicy sauce in combination with cauliflower rice and cucumber creates a perfect taste for this recipe!   • 300 gr chicken cubes
  • 1/2 onion
  • 1 clove of garlic
  • 3 tbsp sugar-free ketchup
  • 2 tbsp soy sauce
  • 2 tbsp sambal oelek
  • 2 tbsp peanut butter
  • 2 tbsp water
  • 400 gr cauliflower rice
  • 1 cucumber
  1. Cut the onion into small pieces on a cutting boardand crush the garlic. Add a tbsp olive oil to a frying pan and fry theonion and garlic in it. After about 2 minutes, add the chicken cubes andfry them all around.

  2. When the chicken cubes are cooked and brown, add theketchup, soy sauce, sambal, peanut butter and erythritol to the pan. Letthe contents of the pan simmer for about 5 minutes, until the sauce has thickened. Addsome water if the sauce becomes too thick.

  3. Meanwhile, fry the cauliflower rice in a separatepan. Then slice the cucumber and divide this over two plates along withthe rice. Finally, divide the spicy chicken over the plates and garnishwith spring onions or fried onions. Enjoy your meal!
