Low-carb Bagels
Have you been looking for a tasty low-carbohydrate alternative to bread? Then this recipe has your solution. I managed to cook these healthy bagels from cauliflower, almond flour, coconut flour and egg. They are very soft on the inside and nice and crispy on the outside. The sesame seeds and poppy seeds provide the classic bagel look and taste. You can take the bagels on their own or top them with something savory or sweet
- 300 gr cauliflower rice
- 3 tbsp almond flour
- 1 tbsp coconut flour
- 2 eggs
- 1/4 tbsp garlic powder
- 1/4 tbsp onion powder
- 1/2 tbsp sea salt
- 1/4 tbsp baking powder
- pinch of black pepper
- 1 tbsp poppy seeds
- 1 tbsp sesame seeds
Preheat the convection oven to 200degrees. Heat a tablespoon of olive oil in a large frying pan and add the cauliflower rice. Wok the rice for 4 minutes while stirring. Let the rice cool down for a while and then scoop it into a clean tea towel. Wring out all the moisture and set aside.
Next, combine the almond flour, coconut flour,baking powder, and spices in a large bowl. Add the eggs and cauliflower rice and mix well again with a whisk and let the dough rest for 5 minutes in the fridge.
Remove the dough from the refrigerator and stir again well in the bowl. Line a baking tray with a sheet of parchment paper. Shape the dough into 4 round rolls of the same size and place them on the baking paper. Make the rounds high, because they don’t rise in the oven. Using the handle of a fork or spoon, make a hole in the center of each sandwich to form a bagel.
Sprinkle the bagels with sesame and poppy seeds and place in them in the oven. Bake the bagels in the preheated oven between 15-20minutes. If possible, turn on the grill setting of your oven and grill the buns for 2-3 minutes for a crispy crust.
Then, take the bagels out of the oven and let them cool for 2-3 minutes. Cut the bagels in half and top with cheese, bacon and lettuce. Enjoy your meal!
