Chicken Cashew Boats

This awesome recipe consists of lettuce boats filled with chicken and cashew nuts. It is very fast to prepare and full of protein, so you are satisfied for a long time. Cashewnuts are a very good source of copper, which is very important for good resistance and contributes to the energy supply of your body.   • 100 gr chicken fillet
  • 100 gr cherry tomatoes
  • 3 lettuce leaves
  • 40 gr unsalted cashews
  • ½ onion
  • ½ spring onion
  • 1 clove of garlic
  • 1 tbsp tamari soy sauce
  • Extra virgin coconut oil
  1. Cut the chicken breast into pieces, chop the onion,cut the spring onion into rings and press the garlic.

  2. Heat a teaspoon of coconut oil in a frying pan or skillet and fry the onion and garlic until translucent.

  3. Add the chicken pieces and fry on all sides.

  4. Add the spring onion, the cashew nuts and the tamari soy sauce, stir and let it simmer for about 10 minutes, until the chicken pieces are completely cooked and the sauce has thickened.

  5. Wash the lettuce leaves and pat dry with kitchen paper.

  6. Place the lettuce leaves convex side down on a plate and spread the chicken-cashew mixture on top.

  7. Serve the cherry tomatoes next to the chicken cashewboats.
