Grilled Salmon with Fennel, Tomato and Mushrooms

This recipe contains a lot of vegetables and also provides your body with a healthy dose of omega 3 fats. Your body needs omega 3 fats to build your brain cells and cell walls. The fats are also good for the nervous system.

Healthy fats are very vital in your body to keep your cholesterol stable, which reduces the risk of cardiovascular disease. It is also very vital to buy good quality fish. Despite its healthy properties, fish can sometimes be quite contaminated. This Grilled Salmon with Fennel, Tomato and Mushrooms recipe is suitable if you are on a low- carb diet.

  • 100 gr Salmon fillet
  • 175 gr fennel bulb
  • 250 gr beef tomato
  • 100 gr mushrooms
  • Lemon juice
  • Coconut oil
  1. Wash the fennel, cut into wedges and drizzle some melted coconut oil over it.

  2. Cut the tomato into wedges and halve the mushrooms.

  3. Heat a grill pan.

  4. Grill the salmon, fennel, tomato and mushrooms for about 6 minutes until done. Turn halfway through.

  5. Sprinkle some sea salt and black pepper over the vegetables and drizzle some lemon juice over the salmon.
