Indian Curry Casserole

This is a very delicious dish from the Indian cuisine! If you are a curry lover, this is one of your favorite recipes! The dish is tasty, nutritious and healthy. A homemade curry paste is tastier and contains much less carbohydrates than a ready-to-use curry paste. In this recipe, our curry paste is made up of herbs, onion, ginger and garlic. The dish is also filled with chicken thigh fillet, cauliflower, spinachand green beans. This recipe can be taken as an evening meal.

Casserole

  • 600 gr chicken thigh fillet
  • 1 cauliflower
  • 2 tbsp olive oil
  • 400 gr diced tomatoes
  • 200 ml coconut milk
  • 1 tbsp tomato paste
  • 1/2 cube of chicken stock
  • salt and pepper to taste
  • 100 gr baby spinach
  • 200 gr green beans

Curry paste

  • 2 tbsp grated ginger
  • 1/2 onion
  • 2 cloves of garlic
  • 1 tbsp ground cumin
  • 1 tbsp turmeric
  • coriander to taste
  • 1/2 tbsp paprika
  • 1/2 tbsp garam masala
  • 1 red pepper, finely chopped
  1. Preheat the convection oven to 180 degrees. Cut the cauliflower into florets. Bring a pan of water to the boil and cook the cauliflower for 5 minutes until tender. After cooking, let it drain well and place it in a greased oven dish together with the chicken thigh fillet. Drizzle the cauliflower and chicken with olive oil and season with salt and pepper. Bake the dish for approx. 25 minutes in the preheated oven.

  2. Prepare the curry paste by mixing all the ingredients in a blender. Add the curry paste to a skillet and cook for 1minute. Then add a tbsp olive oil and fry for another minute. Then take the tomato paste, diced tomatoes, coconut milk and the chicken stock and add this to the curry paste. Let this simmer for 5 minutes over a low heat while stirring. Taste the sauce and add extra salt or pepper if necessary.

  3. Stir fry the spinach in a frying pan for 2-3 minutes and add this to the sauce. Remove the casserole with the baked chicken from the oven and check if the chicken is cooked. Add the curry sauce and bake the dish for another 10 minutes in the preheated oven.

  4. Boil a pan of water and add the green beans. Cook the green beans for 5-10 minutes. Serve the curry dish with the cooked green beans and a little Greek yogurt if desired.
