Low-carbohydrate Caprese Salad
Welcome to our today’s delicious low-carbohydrate main course, caprese salad. This is a light and fresh salad that consists of soft mozzarella balls, cherry tomatoes, avocado, crunchy romaine lettuce, basil, and a balsamic vinegar dressing. - 100 ml balsamic vinegar
- 1 tbsp oliveoil
- 300 gr chicken fillet
- salt and fresh black pepper
- 200 gr chopped romaine salad
- 150 gr mini mozzarella balls
- 200 gr cherry tomatoes
- 1 avocado, cut into cubes
- handful of basil,finely chopped
Put the balsamic vinegar in a saucepan and heat over medium heat. Bring to a light boil and cook for 4-6 minutes, until 50% of the balsamic vinegar has evaporated. Put the remaining balsamic vinegar in a container and let it cool down.
Heat a tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper and place in a frying pan. Fry the chicken breasts for 4 minutes on each side. Cut the chicken breasts into cubes and let them cool down.
Place the romaine salad in a large bowl and add the chicken, mozzarella, cherry tomatoes, avocado and basil. Garnish with the balsamic vinegar and divide into 2 portions.
