Low-carbohydrate Caprese Salad

Welcome to our today’s delicious low-carbohydrate main course, caprese salad. This is a light and fresh salad that consists of soft mozzarella balls, cherry tomatoes, avocado, crunchy romaine lettuce, basil, and a balsamic vinegar dressing. The salad can be served for lunch or as a main course with dinner. You can try it out today and feel free to post a comment at the bottom of this page.

  • 100 ml balsamic vinegar
  • 1 tbsp oliveoil
  • 300 gr chicken fillet
  • salt and fresh black pepper
  • 200 gr chopped romaine salad
  • 150 gr mini mozzarella balls
  • 200 gr cherry tomatoes
  • 1 avocado, cut into cubes
  • handful of basil,finely chopped
  1. Put the balsamic vinegar in a saucepan and heat over medium heat. Bring to a light boil and cook for 4-6 minutes, until 50% of the balsamic vinegar has evaporated. Put the remaining balsamic vinegar in a container and let it cool down.

  2. Heat a tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper and place in a frying pan. Fry the chicken breasts for 4 minutes on each side. Cut the chicken breasts into cubes and let them cool down.

  3. Place the romaine salad in a large bowl and add the chicken, mozzarella, cherry tomatoes, avocado and basil. Garnish with the balsamic vinegar and divide into 2 portions.
