Rice Cakes with Chicken Fillet, Avocado and Tomato
A healthy lunch doesn’t have to take all your time to prepare. This simple, but delicious recipe proves that. A topped rice cake is a good substitute for a sandwich. You do not have to worry that it will not saturate, because it is all about what you put the rice cake on. The avocado and chicken fillet provide you with healthy fats and proteins that saturate you longer than the fast carbohydrates from a sandwich.
- 2 brown rice cakes
- 30 gr chicken breast
- ½ avocado
- 4 cherry tomatoes
- lemon juice
- Sea salt and black pepper
Mash the flesh of the half avocado into mousse and add a squeeze of lemon juice and a pinch of sea salt and black pepper and stir.
Divide the avocado mousse over the rice cakes.
Place a slice of chicken breast on each rice cake.
Cut the cherry tomatoes into halves and place them on top of the chicken fillet.
Season with an extra pinch of black pepper.
