Spicy chicken with cauliflower rice

- 300 gr chicken cubes
- 1/2 onion
- 1 clove of garlic
- 3 tbsp sugar-free ketchup
- 2 tbsp soy sauce
- 2 tbsp sambal oelek
- 2 tbsp peanut butter
- 2 tbsp water
- 400 gr cauliflower rice
- 1 cucumber
Cut the onion into small pieces on a cutting boardand crush the garlic. Add a tbsp olive oil to a frying pan and fry theonion and garlic in it. After about 2 minutes, add the chicken cubes andfry them all around.
When the chicken cubes are cooked and brown, add theketchup, soy sauce, sambal, peanut butter and erythritol to the pan. Letthe contents of the pan simmer for about 5 minutes, until the sauce has thickened. Addsome water if the sauce becomes too thick.
Meanwhile, fry the cauliflower rice in a separatepan. Then slice the cucumber and divide this over two plates along withthe rice. Finally, divide the spicy chicken over the plates and garnishwith spring onions or fried onions. Enjoy your meal!
