Stuffed Zucchini with Minced Meat

This is one of my favorite low-carb main dishes. The zucchinis are filled with lean ground beef, tomato sauce, cheese, bell pepper, garlic, and onion. This recipe is also enjoyable to make and the end result looks very tasty. For those who prefer not to eat red meat, we also have other stuffed zucchini recipes. There is a choice of stuffing the zucchini with tuna, and goat cheese or even vegetarian zucchini stuffing.

  • 3 large courgettes
  • 500 gr lean ground beef
  • 1 red pepper
  • 1 small onion
  • 1 jar of Walden Farms tomato sauce
  • 2 – 3 cloves of garlic, crushed
  • 130 gr grated mozzarella cheese
  • 2 tbsp olive oil
  • 1/2 tbsp freshly ground chili flakes
  • 1/2 tbsp sea salt
  • 1/2 tbsp freshly ground black pepper
  1. Preheat the oven to 175 degrees and heat a skillet containing 1 tablespoon of olive oil over medium-high heat. Add the chopped onion and bell pepper and fry for about 4minutes. Add the crushed garlic cloves and cook for another 1 minute. Place the contents of the frying pan in a container covered with a sheet of aluminum foil.

  2. Then add another tablespoon of olive oil to the pan and crumble the lean ground beef above the pan and fry it loose. Season the ground beef with the freshly ground chili flakes, sea salt and black pepper. When the minced meat is cooked, drain the fat in the pan and stir in the vegetables from the container. Add the tomato sauce and let it simmer for about 10 minutes.

  3. Meanwhile, cut the courgettes into 12 equally sized pieces and hollow out each of these pieces with a small spoon, leaving only 2 cm of the zucchini meat in one piece. After 10minutes of simmering, remove the minced meat mixture from the heat and let it cool for a while. Mix half of the grated processed cheese into the minced meat mixture. Now take a baking tray with a sheet of aluminum foil on top and place the hollowed out zucchini pieces on top.

  4. Divide the minced meat mixture over the hollowed-out zucchini pieces. Garnish with the remaining grated processed cheese and bake the stuffed zucchini pieces in the preheated oven for about 20 to 30 minutes!
