Broccoli Soup with Leek

Are you looking out for a nice bowl of soup? Then try this sumptuous broccoli soup with leek. You can make this delicious soup with only five ingredients namely: broccoli, leek, garlic, stock, and crème fraîche. This soup tastes very good and it’s also very healthy. 

This delicious soup is super easy to make and is ready within 30 minutes. The soup is delicious to eat as lunch or as a starter with a slice of nut bread or garlic bread.  You can keep the broccoli soup with leek in the refrigerator for up to 2 days. You can post a comment at the bottom page for your feedback on the soup.

  • 1 broccoli
  • 2 stalks of leek
  • 1 clove of garlic, crushed
  • 1 tbsp olive oil
  • 750 ml water
  • 1 vegetable stock cube
  • 200 gr crème fraîche
  • pepper to taste
  • fresh chives to taste
  1. On a large cutting board, cut the leeks into small pieces and the broccoli into florets. Heat a dash of olive oil in a stockpot and add the sliced ​​leek and crushed garlic. Fry this for a few minutes, until the garlic starts to discolor.

  2. Add the broccoli florets, water, stock, pepper, and chives to the pan and bring to the boil. Cook the broccoli for 12 minutes with the lid on the pan.

  3. Remove the pan from the heat and mash the contents with a hand blender into a smooth soup. Return the pan to the heat and stir in half of the crème fraîche. Divide the soup between 4 bowls and serve with a tablespoon of crème fraîche. Enjoy your meal!
