Goat Cheese Salad with Fried Mushrooms and Apple

This lunch recipe will keep you full for a long time, since it contains a good amount of protein and fiber. The fried mushrooms add that little bit extra to this incredible salad with goat cheese and fresh pieces of apple. This dish is very good for anyone who follows a strict low-carb diet.

  • 125 gr mixed mushrooms
  • 50 gr soft goat cheese (natural)
  • 75 gr lamb's lettuce
  • 30 gr shallot
  • 1 clove of garlic
  • ½ apple
  • 1 tbsp thyme (fresh or dried)
  • Extra virgin coconut oil
  1. Cut the mushrooms into pieces, chop the shallot, squeeze the garlic, and cut the apple into small pieces.

  2. Heat a tablespoon of coconut oil in a frying pan and fry the mushrooms, shallot, and garlic for about 3-5 minutes.

  3. Season with the thyme and a pinch of sea salt and black pepper.

  4. Place the lamb's lettuce on a plate.

  5. Divide the fried mushrooms and apple pieces over the lettuce

  6. Crumble the goat cheese all over.
