Healthy Chicken Curry with Cauliflower Rice
Have you been missing your favorite chicken curry meal? Then this low carb recipe is for you! It’s amazingly easy to make at home. With this recipe you can make healthy chicken curry. It is not difficult to make, and it’s low in carbohydrates, high in protein and high in fiber. It very ideal if you are planning to lose weight. Bon appetite!
- 150 gr Chicken fillet
- 200 gr Cauliflower
- 150 gr Mushrooms
- 30 gr shallot
- 1 clove of garlic
- 100 ml Coconut milk
- 50 ml Unsweetened almond milk
- 1 tbsp curry powder
- 1 tbsp Lime juice
- Coconut oil
- Sea salt and black pepper
Cut the cauliflower into florets and grind it finely with a food processor, blender or grater
Chop the shallot, press the garlic, cut the chicken fillet into cubes and cut themushrooms into pieces.
Heat a tablespoon of coconut oil in a frying pan and fry the shallot.
Add the chicken and mushrooms and fry for 3 to 4 minutes on high heat.
Lower the heat and add the garlic and curry powder. Bake for about 2 minutes.
Add the coconut milk, almond milk, lime juice and a pinch of sea salt and black pepper. Stir and put the lid on the frying pan.
Let the chicken curry simmer for about 10 minutes, until the chicken is completely cooked. If the sauce is too thick, add a splash of almond milk.
Steam or cook the cauliflower rice for about 2 minutes, until it is cooked to your liking and then drain the water.
Spoon the cauliflower rice into a deep plate and spoon the chicken curry on top.
