Italian Cod Fillet

This is a delicious fish dish with cod, tomatoes, wine and olives. The pleasantness and acidity of the tomatoes enriches the flavor of the cod and the wine and olives complete it. This restaurant-worthy recipe is also super easy to make. The only worry is to be careful not to overcook the fish. White fish is not that firm and if you cook it for too long, there is a good chance that the fillet will fall apart. This recipe can be served as a main course with vegetables of your choice. Bon appepit!

  • 500 gr cod fillets
  • 400 gr canned tomatoes
  • 120 ml dry white wine
  • 30 ml olive oil
  • 70 gr black olives, pitted and sliced
  • 1 small onion
  • 2 cloves of garlic
  • 1 tbsp peter lily, finely chopped
  1. Heat the olive oil in a large frying pan. Cut the onions and garlic into small pieces. Then fry the onions and garlic in the olive oil until they turn color.

  2. Add the diced tomatoes, olives, parsley and white wine. Let this simmer for 5minutes. Then place the cod fillets in the pan and simmer for another 5-8minutes over medium heat, until the cod is tender. Serve the cod with a little sauce from the pan.
