Low-carbohydrate Chicken Meatballs
These low-carbohydrate chicken meatballs are delicious to eat for lunch or as a snack with a drink. The meatballs in this recipe are made from minced chicken, zucchini, spring onion, and herbs. The grated zucchini will keep the meatballs juicy. In addition, it gives the chicken meatballs a fresh taste. Chicken Meatballs
- 450 gr Minced chicken
- 300 gr zucchini
- 3 stalks of spring onion
- 3 tbsp Parsley
- 1 clove of garlic
- 1/2 tbsp black pepper
- 1/2 tbsp Cumin
- 2 tbsp olive oil
Avocado Dip
- 1 avocado
- 1/4 red onion
- 1/2 tomato
- salt and pepper to taste
Grate the courgette over a large bowl using a hand grater. Then take a clean tea towel and place it on a large bowl. Spoon the grated zucchini into the tea towel. Lift your clean tea towel with the zucchini in it and squeeze out all the moisture. Drain the water in the bowl and dry it. Then put the zucchini in the bowl.
Cut the spring onion into small pieces on a large chopping board and add to the bowl with the zucchini along with the minced chicken, parsley, and herbs. Mix everything well with a fork. Then form about 20 balls of the minced meat mixture with an ice cream spoon or with your hands.
Next, heat two tablespoons of olive oil in a skillet over medium heat. Add the chicken meatballs to the pan and cook for 5 to 6 minutes. Then turn the balls over and bake for another 5 minutes. Then lower the heat and fry the chicken meatballs with the lid on the pan for a few more minutes. It is also possible to bake the chicken meatballs in the oven. Preheat the oven to 205 degrees and bake the chicken meatballs for 15-20 minutes.
You can serve the chicken meatballs with a delicious avocado dip. You make this dip by mashing an avocado in a medium bowl. Then cut the red onion and tomato into small pieces and add this to the bowl along with the lemon juice. Season with salt and pepper and the dip is done!
Serve the chicken meatballs per five pieces with a little avocado dip and enjoy!
