Salmon Teriyaki with Broccoli Rice

Looking forward to an easy and fresh low-carb dinner dish? Then this salmon is teriyaki with broccoli rice is a perfect meal! This recipe is super tasty, nutritious and healthy. This makes it an ideal dish when you have little time to cook. The most important part of this meal is, the salmon teriyaki. In this recipe,you will need to bake the salmon in a homemade teriyaki sauce in the oven. With the salmon, you serve it with a plate of broccoli rice. By using broccoli rice instead of white rice, the meal will contain more vegetables and fewer carbs. This meal is therefore suitable for people who follow a strict low-carb diet.

Salmon Teriyaki

  • 2 salmon fillets
  • 50 ml soy sauce
  • 50 ml water
  • 1 clove of garlic, finely crushed
  • Grated fresh ginger
  • 1 tbsp wok oil
  • 1 tbsp arrowroot
  • 1 tbsp sesame seeds

Broccoli rice

  • 400 gr Broccoli rice
  • 1 tbsp olive oil
  • 1 shallot
  • 2 lemon slices
  • 1 stalk of spring onion
  • salt and pepper to taste
  1. Preheat the oven to 180 degrees. In a small saucepan, combine the soy sauce, crushed garlic, grated ginger, wok oil, arrowroot and water. Put the pan on the stove and bring it to a boil.  Let it boil for about 2-3 minutes, until the sauce has thickened slightly.

  2. Place the salmon fillets in a small oven dish and pour the sauce over the salmon fillets. Now take a spoon or kitchen brush and coat the zam fillets well with the sauce in the dish. Bake the salmon teriyaki in the preheated oven for 15 minutes.

  3. Meanwhile, finely chop a shallot and fry it in a frying pan with olive oil. Add the broccoli rice and wok it within 4-5minutes. Season the rice with salt and pepper. Divide the broccoli rice between two plates and set aside.

  4. After baking, place the salmon fillets on the broccoli rice and garnish with chopped spring onions and sesame seeds. Serve the salmon fillets with a slice of lemon if desired. Enjoy!
