Spicy Lentil soup with Fresh Spinach
This is a low budget recipe and super easy to make. Also, it is packed with important nutrients. Lentils are a good substitute for potatoes, pasta or rice. They contain enough carbohydrates to make you feel full and contain a lot of fiber, which is good for your digestion. Additionally, they ensure a stable blood sugar level, which decreases your appetite for sweet items. This makes the Spicy lentil soup with fresh spinach suitable lunch or dinner if you want to lose weight. In combination with the carrot, spinach, onion, garlic and spices, it is a vitamin boost in a bowl. Hope you will enjoy the soup!
- 140 gr red lentils (uncooked)
- 400 gr tomato cubes (including juice)
- 400 ml coconut milk (canned)
- 200 gr carrot
- 150 gr fresh spinach
- 200 gr onions
- 3 cloves of garlic
- 1 tbsp cumin powder
- 1 tbsp turmeric
- 1 tbsp cinnamon
- 1 tbsp lemon juice
- 2 vegetable stock cubes
- 900 ml water
- Coconut oil
- Sea salt and black pepper
Clean and rinse the lentils with water.
Chop the onions, cut the carrots into small cubes and squeeze the garlic.
Heat a tablespoon of coconut oil in a large (soup) pan and fry the onion, carrot and garlic for about 3 minutes.
Add the turmeric, cumin powder and cinnamon and fry for one minute.
Add the coconut milk, the vegetable stock cubes, the red lentils,the tomato cubes, the water and a pinch of sea salt and black pepper.
Stir the soup, put the lid on the pan and bring the soup to a boil. When the soup boils, remove the lid from the pan.
Reduce heat to medium-high and let the soup cook for about 20 minutes, until the lentils are soft.
Add the lemon juice and spinach and stir.
Serve the soup as soon as the spinach has shrunk.
